Up north, scenic trails, open in December - I don't know what to offer. I'd first check the FS roads open/closed status page to see what might be available.
As for scenery - Pole Hill has three or four "nice views" areas. Storm Mountain, at the end, has views to the east and south. Moody Hill - not a lot of scenery (but some). Kelly Flats has some - but has more technical involved. Sand Flats northeast of Walden - a unique place of its own (a plus is that it should not be bug infested at this time of year!). ooh, hitting the FS roads page, something that could be in the "easy" and "different" - Pawnee Grasslands. Easy ramble. It could also be a target shooting run (if such would be of interest). I have traveled the western grasslands a fair bit but have never visited the eastern grasslands. I think Tom might have input on the eastern grasslands. Switzerland is easy with views to the east / plains, is open, and might not have too much snow.

The jeep's heading to the shop Wed morning for warranty driveshaft replacement / install plus rear diff pinion seal replace and front axle pass side seals replace. Unknown is how long they'll have it - likely not long.
Other scenic options that come to mind - but not necessarily "Fort Collins" would be about any above timberline trail - Kingston Peak, Saints John are a couple - all expected to be closed this time of year.
Almost everything in the area is scheduled to close on December 1, it usually does take the FS a few days to get all the gates closed though.
