Kingston Peak was mentioned. If open and the day is nice, a North to South run offers grand, above timberline mountain views. Not overly difficult either. You could spend more time on local trails if you wished.

Argentine Pass is not too difficult and again offers above timberline views, mountain mining history (though scant little is left of the Waldorf townsite), fun creek riding.

Kingston doesn’t usually open til the end of June iirc. Pickle gulch is fun and has mining history.

Would the Empire loop be doable by then? If so there is a lot to do, and would make for a very fun day. Just a suggestion?
