    Default new pellet smoker

Just got back from picking up my early Christmas/birthday present from my wife. Think she has missed my bbq. I kinda gave it up when my partner in bbq comps got stationed overseas and I let him take all the equipment. He was the mastermind, and I wasn't going to compete without him. Plus we have dreams of competing over in Germany where they is stationed.

Kicker is her birthday is before mine and only a couple days away, yet she is the one giving out gifts. She actually apologized because she needed me to pick it up. She said she didn't think through getting a 155# box home in her Camry, by her 100# self. I am just stoked to have a smoker again.

Guess I have no excuses now.

Wonder what we should try first?

The wife got me a big smoker 2 years ago for Christmas. I love it. Mine is a heavy side load beast. It's just like this one in the video. It's heavy duty and weighed in around 400 lb and was shipped via freight. Holds it's temp pretty well and could smoke a suckling pig. https://www.youtube.com/watch?v=PlB8ZOokbrc

My personal favorite is pork ribs and shoulder. The wife likes brisket. Kielbasa are also really good filler meats if you're going to have a lot of people to feed. They only need like 2 hours at 210-225F.

Mmmm, ribs!!! I'd love to do elk ribs, but sadly, I am out and no one I know has any either. Thinking brisket will be the winner, with chicken a close second. I haven't made our award winning chicken (never scored less than a 3rd place finish with it over 3 seasons competing) since my buddy moved. It sure is tasty.

I upgraded to a GMG just before Thanksgiving. So far I’m loving it, the cost of pellets will be my limiting factor with using it though, these things literally burn money! I’m working on a group buy for pellets though which could potentially cut costs by 75%, we’ll see what they say for shipping.

So so far all I’ve done on it is a turkey, burgers, pizza beans and park butt. All turned out awesome, need to figure out how to get a little more smoke on the butt. Getting it started and up to temp without even getting out of bed was nice, gotta love the WiFi.

I found some pans (lasagna I think) at Walmart that fit perfect under the grates, they are the right length to hang on the little shelf the racks sit on. They work great for catching drippings which are yummy. Did a gravy with them for the turkey and will use them to catch the rendered fat for burnt ends.

Which model from GMG did you get? Got a photo of said pans?

I went with the Jim Bowe. Don’t have any pics of the pans but I can grab some measurements, they are just a standard metal baking pan but they fit perfect. I believe the Jim Bowe and Dan Boon are the same depth, just different lengths. Not sure about down your way but the Safeway up here has pork butts on sale for $1.50/lb, perfect for breaking it in.

i’ve been doing a bunch of research on pellets, turns out they aren’t always what they say they are on the bag. For instance Traeger uses oak or alder with an oil to get the hickory flavor. Of course they don’t advertise that so it’s all second hand info but I guess a lot of them use oak as a filler wood.

I have had a Traeger for a few years, but lately I have been really liking the pit barrel cooker https://www.pitbarrelcooker.com/ . They started here in Denver. I did a turkey on thanksgiving and took some over to my neighbors, they liked it so much, I ended up smoking one for them last weekend lol. I

Aaron, here’s a couple pics. The pan is 16” long, my grates are 16.25” long.

Ok. Not sure what that means. Can't see any photos on either my phone or desktop, whether I am logged in or not. Oh well.

Aaron, I viewed this page in two not-logged-in browsers and neither showed the photos - though your first photo does show (it's externally linked). I made two screen shots of the pans and will upload them to the forum - though if the issue persists, which I believe it will, the still won't be visible. I'll thus look into forum permissions.

EDIT: The images, in this post, show in my test browser where other thread images don't. Hmmm...
